Welcome to May bakes in review! (I cannot believe it!) Before we dive headfirst into the first *official* month of summer (!!), let’s recap all the tasty spring-to-summer bakes from the past month. Here’s a look at all the dairy-free summer baking recipes that came out of the Fetching Goodies kitchen this May.

I love taking two independently delicious things and combining them into one outrageously scrumptious treat. I first made these 6 years ago and they need a comeback.

Chocolate covered pretzel vibes meet gooey s’mores in a rich chocolate cookie for an out of this world salty-sweet combo.

2. Oreo-Bottomed Cookie Bar Dot Cakes | Dairy-Free with Vegan & Gluten-Free Options

I knew I had to make an undetectably dairy-free version of the dot cake trend. While I was creating this recipe, I had this ah-ha moment that the jars are the perfect size for an Oreo.

And so, I present to you the Oreo-Bottomed Chocolate Chip Cookie Dot Cake with a luscious chocolate frosting and sprinkles of all shapes and sizes.

Think of them like an individual chocolate chip cookie cake in a jar with an Oreo crust. I mean, what’s not to love.

3. Zucchini Bread | Dairy-Free with Vegan and Gluten-Free Options

Summer is meant for Zucchini Bread. Zucchini Bread is meant for summer. Especially when it’s undetectably vegan and gluten-free zucchini bread.

There aren’t many vegetables that you can grate up and throw into a batter to make a luscious, delicious breakfast bread. Carrots too. But zucchini is magical.

This zucchini bread recipe is soft with a hint of cinnamon, and filled with tender zucchini in every bite. It is SO MOIST. There’s no other way to say it. Moist has to be said.

Angel Food Cake is the dessert of summer! Each slice is light and airy with a tender, springy crumb that practically dissolves on your tongue.

Pile it high with fresh strawberries, blueberries, and whipped cream for a stunning summer dessert. It’s naturally dairy-free and comes together with just 6 ingredients.

5. Soft & Chewy Oatmeal Chocolate Chip Cookie Bars | Dairy-Free with Vegan & Gluten-Free Option

Oatmeal chocolate chip is always in season. These bars are soft, thick, and chewy with hearty oats and melty chocolate chips in every single bite.

Let’s have a strawberry shortcake party!

I first made these for Father’s Day last year and set up a little build-your-own strawberry blueberry shortcake bar.

The combination of fluffy, flaky, tender shortcakes with luscious whipped topping and juicy berries is a burst of sunshine and summertime in every bite.

Perfect for patriotic holidays, too.

7. Lemon Poppyseed Cookie Bars | Vegan & Gluten-Free

Soft, luscious, perfectly sweet lemon poppyseed cookie bars. Bright, fresh lemon flavor shines through in every bite, with little pops of poppyseed that give each bar a satisfying, subtle crunch.

No one would guess they’re vegan, gluten-free, dairy-free, and egg-free. A lovely, easy spring and summer dessert for activities from picnics to potlucks and school activities to BBQs and birthday parties.

8. Peanut Butter Cookies | Dairy-Free with Gluten-Free Option

What is it about the crisscross that makes these taste even better?! Such a classic!

I usually make peanut butter cookies when Cole mentions them. He loves them. I do too, especially with chocolate chips. They’re peanut buttery and have a perfectly sweet, melt-in-your-mouth texture.

9. Lindt Oatmilk Truffle Brownies | Dairy-Free with Vegan & Gluten-Free Options

Ultra-fudgy brownies filled with chopped oatmilk truffles and finished with flaky sea salt. These dairy-free brownies are rich, indulgent, and easily made vegan and gluten-free. An absolute must if you love chocolate + brownies! One bite in and you’ll understand why these don’t last long.

10. Lindt Oatmilk Truffle Brownie Sundae using Lindt Oatmilk Truffle Brownies

Elevate the previously mentioned Lindt Oatmilk Truffle Brownie and take it totally over the top as a brownie sundae. I like to have the brownies warm (microwave for a few seconds), then top with coffee Oatly ice cream, Sweetapolita sprinkles, and Hershey’s chocolate sauce drizzle.

Customize to fit your fancy. I love serving these with family and friends too as a brownie sundae bar.
