Melt in your mouth peanut butter cookie made with oat flour, studded with dark chocolate chips, drizzled with dark chocolate icing and sprinkled with flaky maldon sea salt.  Wow. Naturally undetectably vegan + gluten-free. Guaranteed delicious.

Cookie bars freeze very well, if desired. To freeze, place bars in a freezer-proof container (i.e. freezer ziploc bag or tupperware) and pop it into the freezer. Whenever you want one, you can (a) simply take it out of the freezer and allow to rest on the counter for about 2 hours, (b) enjoy frozen! or (c) put it on a plate and into the microwave for 30 seconds for a warm bar. YUM!
