These beauties are jammy, buttery goodness. A rich shortbread cookie bar is slathered with a layer of raspberry-strawberry-plum jam, then another layer of shortbread, and finished with a vanilla sugar drizzle. Melt in your mouth deliciousness! You’d never know they’re vegan!
Cookie bars freeze very well, if desired. To freeze, place bars in a freezer-proof container (i.e. freezer ziploc bag or tupperware) and pop it into the freezer. Whenever you want one, you can (a) simply take it out of the freezer and allow to rest on the counter for about 2 hours, (b) enjoy frozen! or (c) put it on a plate and into the microwave for 30 seconds for a warm bar. YUM!
