Cookie Bars Ep. 3: Chocolate Chip Cookie Bar Ice C Cookie Bars Ep. 3: Chocolate Chip Cookie Bar Ice Cream Sandwiches!

Welcome back to Crowd-Pleasing Cookie Bars, the series where I show you how to make bakery-worthy desserts quickly and simply, all in one pan.

There’s ONE month left of summer 2026!! Which means it’s officially time to make the all time classic, ice cream sandwiches.

When I was a kid, two of my favorite desserts were (1) the traditional ice cream sandwiches with vanilla ice cream between chocolate cake-like layers, and (2) the Chipwich chocolate chip cookie vanilla ice cream sandwich from the ice cream truck.

Today, we’re taking inspiration from both to create the ultimate summertime dessert: Chocolate Chip Cookie Bar Ice Cream Sandwiches.

A thick layer of cool, creamy ice cream slathered between soft chocolate chip cookie bars, and all rolled in sprinkles. What’s not to love?!

Use your favorite ice cream. Choose one flavor, two, or even three (Neapolitan cookie sandwiches sound pretty incredible tbh).

You can use mini chocolate chips or regular-sized. Dairy butter or vegan butter. Eggs or flax eggs. All-purpose flour or gluten-free. Rainbow sprinkles, chocolate jimmies, or any sprinkles that make you happy. (My favorites come from @sweetapolita)

Nothing says soak-up-the-rest-of-summer quite like ice cream sandwiches, and now they’re easier and tastier than ever to make.

I’ve had the pleasure of making thousands of cookie bars for friends, family, coworkers, customers, weddings, gifts, and more. 

And one of the questions I’ve always been asked is “How do you get those clean cuts?!”

Here are the 5 steps I take when slicing cookie bars, so you can impress your people with those clean cuts, too!

1. Let the bars cool completely in the pan before cutting.

This allows the cookie to set and any melty ingredients, like chocolate, to solidify. 

2. Pop them in the freezer for 30-60 minutes.

Once the bars are fully cooled, cover the pan and pop it into the freezer for 30-60 minutes. This helps the bars stay extra firm while you cut to get those crisp, clean edges. If you don’t have space in the freezer, use the fridge. They won’t be as solid (aka, not frozen) but it’ll still help keep the bar edges clean when slicing. 

3. Cut on a cutting board.

Once the bars come out of the freezer/fridge, use the parchment paper overhang to lift them out of the pan and onto a cutting board. Then proceed with the cuts. Using a cutting board will allow you to slice all the way through the bars, and all the way to the edges.

4. Use a sharp knife.

I use a large chef’s knife to slice. A long, sharp blade helps to make straight, clean cuts all the way through the bars. If any cookie does stick to the knife when you’re slicing, wipe off the knife so it doesn’t impact the next cuts.

5. Use a ruler.

I have an aluminum ruler that I use solely for bar cutting. Hover it over the pan to make little cut marks with the knife where you want to slice the bars on each side of the pan. Then ‘connect the dots’ with the knife to get straight, clean, even-sized bars. 

After a few pans of bars you’ll be a clean cutting pro. And, if the cuts aren’t exactly how you want them, don’t stress! You can clean up the edges with the knife if needed (and enjoy the ‘scraps’)!
